Comic Life ($6.49 for iPad) Lots of themes or create a page from scratch. Use as a presentation or publishing tool. Use as a mindmapping tool.
Kidspiration Maps (Free or $13.99 for the iPad) Excellent mindmapping and Graphic Organiser app
Kid's Journal ($1.29 for iPad) Great app to start young children writing diaries, journals or just reflecting on the day. Great for individual iPad owners and you can set up class sets of journals on one iPad. They can be shared to iBooks.
Book Creator ($6.49 for iPad) Make a book that has sound, photos, videos, and text and then share to iBooks

Pages (Free on new devices)
$13.99 for iPhone; $13.99 for iPad) WordProcessing application. Apple version of Word. Students can draft write and present information and publish work. Add photos and movies that have been taken with the device. Add Tables, graphs and shapes. There are a few templates to use or you can purchase a lot more variety from Designs for Pages ($4.19 for iPhone/iPod Touch; $4.19 for iPad) 623 templates for Pages
Keynote
(Free on new devices)
($13.99 for iPhone; $13.99 for iPad) Apple version of PowerPoint. Publish or present work. Add photos and movies that have been taken with the device. Add Tables, graphs and shapes. Add transitions and builds.
iMovie
(Free on new devices)
($6.49 for iPhone/iPod Touch; $6.49 for iPad) Create movies, present work. Use photos and movies and songs that you create in Garageband.
GarageBand (Free for iPhone/iPod Touch; Free for iPad) Create and record music, add multiple tracks using different instruments. Have an instrumental band of iPads where students are playing different instruments.
iPhoto Free on new devices ($6.49 for iPhone/iPod Touch; $6.49 for iPad) Edit your photos, crop. lighten, darken, add effects.

Chrome (Free for iPhone/iPod Touch; Free for iPad) Chrome browser
Screen Chomp (Free for iPad) Use as a whiteboard and record what you are doing and play straight back without saving. This is the app I highly recommend for juniors.
Tellagami (Free for iPad) Make simple short movies with one character, choosing emotions, take a background shot and record your voice. Make a series of these and put them into iMovie. More about Tellagami.
